pasta with artichokes, lemon & basil
4-6 ounces of steamed artichoke hearts (can be found packaged in vegetable section of most store otherwise you have to get fresh and steam them)
8 oz dried spaghetti
1 lemon (large) zested and juiced
¼ cup pine nuts slightly roasted
½ medium shallot thinly sliced
2-3 tablespoons of fresh finely chopped basil
Parmesan cheese for garnish
Cook spaghetti till done to your liking.
In a bowl, put the spaghetti, pine nuts, artichokes and shallot. In another bowl whisk together the lemon juice, zest, basil and salt and pepper and then add mixture to first bowl. Finely grate parmesan cheese over servings.
